Quick pizblog update (I realized that despite making progress in pizza making, I had neglected to report on it).
My parents went out of town a couple weeks ago, and I made pizza pretty much every night. One was a failure, I tried a different sauce, but it ended up being bad. One was alright. Then I tried my hand at making my own dough from scratch. It ended up being too salty though, so it's back to the drawing board for now.
My parents came back from their trip with pizza making gifts though. They bought me a peel and some instant yeast (which I was having a very difficult time finding around here). Last week, I bought some tiles to use as a stone. Now all I have to do is wash them and get cooking. I've been kind of busy lately with work and school, but I think this weekend (maybe sooner in the week) I'm going to try and make some pizzas.
More as the story unfolds!
Pizblog - Take 2
I made another pizza tonight. It was a great success as far as I'm concerned. It's no where near perfect yet, but I feel my pizza making skills are growing even as I type. Basically, to make the bagged crust mix better, I added some extra flour, garlic salt, and olive oil. Then, after I mixed it all together, I kneaded it an extra 10 minutes than usual. One of my problems is that I keep making pizza when I'm hungry. When I do this, I get impatient and want to hurry up and make it. This then leads to less kneading, and less time sitting in the refrigerator. For only getting to chill for an hour though, the crust still ended up pretty good.
I am expecting a few large steps back though when I start to mix my own dough up from scratch. In the long run, I expect this to yield better results, but I'm sure I'll have at least a few shitty first tries. At least the toppings will always be good though, I pretty much plan to stick to a basic pepperoni and salami pizza until I work out the kinks in the dough. Eventually, I also want to make my own sauce too, but I'm more concerned with the foundation of the pizza right now.
This pizza did turn out fucking delicious though. Not to mention it came out looking great. Just look at that fucking thing!
Anyways, more later. I plan on getting the ingredients for made from scratch dough over the weekend.
Man, I just made a pretty killer pizza. I think it could have been better though, crust-wise. Mainly because I used apremade crust mix from a bag. It made an alright crust, but it didn't taste amazing and it also wasn't a crust that I actually made myself. Let me tell you though, my toppings game is topnotch. I used some Boar's Head hard salami and pepperoni, and it was delicious. It was a little greasy, but I blame myself for being a littleoverzealous with the meats' distribution. I also seasoned with a little olive oil and garlic salt, and that was also good. The cheese was pretty good, it was a mix of mozzarella and provolone out of a bag, but I think in the future I would liketo experiment with fresh mozzarella. I'm not sure what the difference between whole milk and skim milk mozzarella is flavor-wise though, so I'll have to look into that. I was going to buy it fresh today, but I was caught off guard by the two choices.
I couldn't find a pizza peel in Publix, and I doubt that they have them in Wal-Mart, so the search continues. I'm thinking I can find one at Bed, Bath, and Beyond or Linens and Things though. If not, I may have to resort to ordering one off of the internet. I would like to actually test a few out before I actually pick one, so ordering off the internet is not the ideal situation. I was planning on stopping by Lowe's today, to buy some tiles, but I figure there's no realpoint to get them until I get a peel. Without it, I won't have a way to get the pizza on or off the tiles.
I think I may start a devblog for my pizza making, or I guess, a pizblog (pizzblog?). If anything, I'll just keep these posts tagged with "pizblog".
